Here is a requested recipe from one of my readers…here ya’ go, Susan! Enjoy!
Creamy Home-made Hot Cocoa Mix
1/3 c. unsweetened cocoa powder
1/4 – 1/2 c. sugar (depending on how sweet you want it) I use super-fine Sugar in the Raw, but you can use white sugar, as well
1 pinch of salt
1/3 c. boiling water
3 1/2 c. milk
3/4 tsp. vanilla extract
1/2 c. half and half (or you can use plain coffee creamer)
Directions: Combine cocoa, sugar and salt in a saucepan. Blend in the boiling water. Bring this mixture to a low boil on med.-low heat, stirring constantly. Simmer and stir for couple of minutes, making sure that it doesn’t scorch. If it’s boiling too rapidly, turn the heat down. Stir in the milk and heat until hot, but do not boil! Remove from the stove and add vanilla. This will make 4 servings. Once the cocoa is divided into 4 mugs, add the half and half, or cream to each mug to cool it down. I always add either the mini marshmallows, or one big marshmallow to their mug.
For different flavors, you can add a pinch of peppermint extract at the end, or orange extract. Makes different flavored hot cocoa. Yum!
